Add RSpec

Modifies the Default Rake task to run Rubocop, RSpec, then TestUnit
tests. (Previously was Rubocop then TestUnit.)

Modifies the 'test' Rake task to only run TestUnit tests (skips
Rubocop).

Also prevents the SimpleCov report from automatically opening every time
the test suite is run.
