one section where people could feature their SaaS or whatever product using htmx in the stack would be great

I support this one. I also recommend encouraging people to add some sort of topic related to HTMX to their repositories.

I'm already doing it with the used-htmx topic.

Third party HTMX extensions could go with htmx-extension topic, which could help about visibility.

Encouraging the usage of these topics in the README is encouraged 😂.
