A few month ago I had the same problem. Therefore I made some investigations and found out, that the color is stored in the same database table as the calendar itself. In order to colorize a calendar for each user independently, the database scheme has to be changed.
But maybe there is another possibility to accomplish this.
Id woud be nice to change the color from shared calenders to.
