I have run TumblrThree on my likes a few times now in different configurations. I have selected all of the meta options and the dump crawler data option. And yet it successfully downloads images and pictures but there is no txt or json file to be found anywhere. Is it stored outside the blog folder or something? Or is it not possible to download the actual liked posts?

It's not possible (yet), hence there is no option for it.
Someone has to take the time and implement it. There are/were already numerous issues opened for this, for example #175, #338, #292, #232.
