Given that unpacking backup produced by backup gem is straightforward and main problem are boredom and typing mistakes I made my own script that is issuing necessary commands. I published it at https://github.com/matkoniecz/backup-gem-extractor-crutch (note, as it is intended primarily for my own use it is tested and working with settings that I am using).
