The default theme should be based on Calcite-Bootstrap. Calcite is Esri's design framework and is the standard used for Portal and ArcGIS Online development. Using this Calcite Boostrap as the default would result in Geoforms that from a styling perspective, match the ArcGIS Online and Portal design.
It actually doesn't look like much work would be required to do this. Create a new calcite theme, reference the calcite-bootstrap.min.css, create a thumbnail and you're pretty much 90% there. I did notice that a little work might need to be done with the link glyph but that's small potatoes.
